Ingredients

  • 4 cups Water
  • 1 lb Lean Ground Turkey
  • 1 cup Brown Lentils
  • 24 oz Diced Tomatoes (Canned)
  • 1 Celery Stalk
  • 1 Bell Pepper
  • 2 tbsp Olive Oil
  • 1 1/2 tbsp Chili Seasoning

Instructions

  1. Rinse the lentils thoroughly and set them aside.
  2. Wash and dice the bell pepper and celery.
  3. Bring 3 cups of water to a boil in a large pot.
  4. Heat 2 tbsp of olive oil in a separate pan over medium heat.
  5. Add lentils to boiling water and bring to a boil. Boil for 10 minutes while cooking the meat.
  6. Add ground turkey to the hot skillet and cook until barely any pink is left.
  7. Add bell peppers and celery to the skillet with the ground turkey and cook until the ground turkey has browned and the vegetables have become tender. Chop the meat up during this stage with a meat chopper or a wooden spoon.
  8. Add the browned meat, bell peppers, celery and diced tomatoes to the pot with the lentils.
  9. Add 1 1/2 tbsp of homemade chili seasoning or store bought seasoning to the pot.
  10. Stir to combine all ingredients.
  11. Simmer for 10-20 minutes.
  12. Taste, adjust seasonings, serve, and enjoy!

Notes

  • Additional seasonings that go well in this dish are: Oregano, Sage, Rosemary, and Thyme.
  • You can substitute the water for vegetable or chicken stock for added nutrients and calories.
