Next, add 1 3/4 cups of water, 1 cup of gluten free rolled oats and a pinch of salt to a blender. I like to use Bob’s Red Mill Gluten Free Organic Oats for this recipe. Blend on high for about 3 minutes, or until all the chunks are gone. Once you have a nice smooth batter, you’ve blended long enough. One time I didn’t blend long enough and while it didn’t ruin dinner, it just didn’t turn out as well.
Now it’s time to cook the tortillas. Pour your batter over the preheated griddle, in the shape of a rectangle. Next set your timer for 20 minutes and carry on with making the rest of your meal. I recommend pairing these with my tuna salad recipe!
Once the tortilla has cooked for 20 minutes, use a spatula to cut four even strips of tortilla. After you have the four sections cut, flip them over and cook another 10-15 minutes. Again, you can go hang out on the couch, finish cooking your dinner or whatever. These really won’t burn as long as your griddle is truly non-stick. I love making them this way because I can put them on to cook and carry on with other stuff.
After 10-15 minutes has passed, get out a cooling rack and put your tortillas on there to cool for about 5 minutes before eating. Allowing them to cool will ensure they don’t get soggy! After 5 minutes is up, you can serve them and enjoy!

Instructions

- Pour your blended oats over the preheated griddle, in the shape of a rectangle
- Cook for 20 minutes.
- After 20 minutes is up, use a spatula to cut the pieces into 4 even strips.
- Flip the strips over with the spatula. (Sometimes you can flip the whole rectangle without having to cut it but I like to cut it first.)
- After flipping them over, cook for another 10-15 minutes.
- Remove from the griddle and place on a baking rack to cool for 5 minutes.
- Serve and enjoy!
