Ingredients
- 12 oz Cod
- 1/4 cup Almonds
- 1 tsp Dijon Mustard

- 1 tsp Olive Oil
- 1/4 tsp Salt
- 1/4 tsp Pepper
Instructions
- Preheat oven to 400°F (200°C).
- Using a food processor, finely chop your almond.
- In a shallow bowl, combine the chopped almonds, salt, and pepper. Mix well to ensure all the flavors are evenly distributed.
- In a separate bowl, combine maple syrup and dijon. Mix well.
- Line a baking sheet with foil and coat with olive oil.
- Place Cod filets on baking sheet.
- Brush maple syrup and dijon mixture over the cod.
- Using a spoon, add almond mixture to the tops of the cod filets. Once all the almond mixture is on the cod, gently press the mixture into the cod with the back of the spoon.
