Healthy Mashed Potatoes: Vegan, Dairy Free

Description

Indulge in the guilt-free pleasure of our Healthy Mashed Potatoes! Made with minimal ingredients, these mashed potatoes are perfect for those who are lactose intolerant or following a dairy-free diet.


Ingredients

Scale
  • 1 lb Red Potatoes
  • 1/3 cup Water
  • 1 tbsp Olive Oil
  • 1/4 tsp Salt

Instructions

  1. Wash your potatoes.
  2. Peel and chop your potatoes into evenly sized pieces. About 2 inch pieces.
  3. Bring a large pot of water to a boil.
  4. Add your potatoes to the boiling water and return to a boil.
  5. Boil for 20 minutes. Then, check your potatoes for tenderness by using a large fork and piercing through the potatoes.
  6. Once the potatoes have become tender, strain them and add them to a mixing bowl.
  7. Add in your olive oil, salt and half of your water.
  8. Mix on low-medium, gradually adding in more and more water.
  9. Taste and add more salt or water as needed.
  10. Serve and enjoy!

Notes

  • To boost the calories and nutrients, add in almond, oat or soy milk instead of water
  • I always use my Kitchen Aid when mixing and mashing, however you can use any stand mixer, hand mixer or even a potato masher.
  • You don’t have to peel your potatoes. I prefer not to, however I included that step for those of you who like to peel yours.
