Indulge in the guilt-free pleasure of our Healthy Mashed Potatoes! Made with minimal ingredients, these mashed potatoes are perfect for those who are lactose intolerant or following a dairy-free diet.

- 1 lb Red Potatoes
- 1/3 cup Water
- 1 tbsp Olive Oil
- 1/4 tsp Salt
Instructions
- Wash your potatoes.
- Peel and chop your potatoes into evenly sized pieces. About 2 inch pieces.
- Bring a large pot of water to a boil.
- Add your potatoes to the boiling water and return to a boil.
- Boil for 20 minutes. Then, check your potatoes for tenderness by using a large fork and piercing through the potatoes.
- Once the potatoes have become tender, strain them and add them to a mixing bowl.
- Add in your olive oil, salt and half of your water.
- Mix on low-medium, gradually adding in more and more water.
- Taste and add more salt or water as needed.
- Serve and enjoy!
Notes
- To boost the calories and nutrients, add in almond, oat or soy milk instead of water
- I always use my Kitchen Aid when mixing and mashing, however you can use any stand mixer, hand mixer or even a potato masher.
- You don’t have to peel your potatoes. I prefer not to, however I included that step for those of you who like to peel yours.
