- 1 lb ground beef
- 2 cups chicken stock
- 1 can diced tomatoes
- 1 can mixed beans or your favorite bean (Drained and Rinsed)
- 1 can corn (Drained and Rinsed)
- 1 bell pepper
- 1 1/2 tbsp taco seasoning
Instructions
- Drain and rinse the mixed beans and corn. Dice the bell pepper into small pieces. Set aside.
- In a large pot or Dutch oven, brown the ground beef over medium heat. Break it up into small pieces as it cooks, ensuring it is evenly browned.
- Once the ground beef is cooked, add the diced bell pepper to the pot. Cook for a few minutes until the pepper softens slightly.
- Next, add the diced tomatoes, drained mixed beans, and corn to the pot. Stir everything together to combine.
- Pour in the chicken stock and sprinkle the taco seasoning over the ingredients.
- Stir well to incorporate the seasoning throughout the soup.
